1 goat’s breast
¾ cups of oil
1 medium onion chopped
2 cups of carolina rice
2 medium tomatoes chopped
1 cup of parsley chopped
1 tablespoon of tomato sauce (pulp)
In a large frying pan add the oil and sauté the onions. Then add the rest of the ingredients and cook for approximately 5 minutes on low heat, stirring constantly. Season the goat with salt, pepper and the cumin. Then stuff the part between the skin and the ribs with the stuffing previously prepared and sew it tight. Cook in a casserole filled with enough water in a medium heated oven (150-180 C) for 3 hours.
