Traditional dishes
The women of Nisyros have many interesting local recipes from main courses to sweet preparations.
The most typical ones are:
- Boukounies (pork meat cooked with grease)
- Kapamas (stuffed goat)
- Pithia (chick-pea balls)
- Mizithra (cream cheese)
- Agramithozoumo
- Kapari (caper)
- The cheese of Tirias
Excellent traditional sweets:
- Xerotigana
- Diples
- Loukoumades (doughnuts)
- Finikia
- Kourampiedes (sugar buns)
- Moustalevria (grape must pudding)
- Spoon Sweets - Preserves (bitter orange, quince, little tomato)
- Pastellaries (figs filled with almond kernel and sesame)
Interesting traditional drinks:
- Soumada (Bitter almond flavoured juice)
- Koukouzina (grape or fig distillate, a similar taste to raki)
- Sapsicho (rosemary)
All these recipes add that special ingredient to the celebrations and festivals that take place in Nisyros and naturally are a delicious treat for visitors.
