The women of Nisyros have many interesting local recipes from main courses to sweet preparations.
The most typical ones are:



  • Boukounies (pork meat cooked with grease)
  • Kapamas (stuffed goat)
  • Pithia (chick-pea balls)
  • Mizithra (cream cheese)
  • Agramithozoumo
  • Kapari (caper)
  • The cheese of Tirias
Excellent traditional sweets:
  • Xerotigana
  • Diples
  • Loukoumades (doughnuts)
  • Finikia
  • Kourampiedes (sugar buns)
  • Moustalevria (grape must pudding)
  • Spoon Sweets - Preserves (bitter orange, quince, little tomato)
  • Pastellaries (figs filled with almond kernel and sesame)
Interesting traditional drinks:
  • Soumada (Bitter almond flavoured juice)
  • Koukouzina (grape or fig distillate, a similar taste to raki)
  • Sapsicho (rosemary)
All these recipes add that special ingredient to the celebrations and festivals that take place in Nisyros and naturally are a delicious treat for visitors.
