“Labropites”

Ingredients (for the pastry):
1 kilo of flour (all purpose)
3 cups of yoghurt
3 cups of butter
3 eggs
1 baking powder sachet
1 teaspoon of salt
Ingredients (for the stuffing):
1 kilo of anthotyro cheese or mizithra
½ kilo of feta cheese
3-4 eggs
pepper and nutmeg
1 egg (for brushing)
Preparation:
Mix the yoghurt, the melted butter, salt and eggs in a bowl. Slowly add the flour and baking powder. The dough must be soft. Open the dough into thin sheets (1cm thick). Butter the muffin moulds and using your hands make sure the pastry is the same overall. Mix all the stuffing ingredients, mash the cheese with a fork and fill the muffin moulds. Finally brush some egg on top and sprinkle some cinnamon or pepper and bake until golden brown.
Notes: Muffin moulds come in many sizes.
We make Labropites in our village at Easter and that’s why they‘re called so.
